Filipino Style Chicken Adobo Recipe
Ingredients:
- 1.5 kg chicken, cut into serving pieces
- 1 cup soy sauce
- 1 cup white vinegar
- 1 head garlic, peeled and minced
- 1 onion, peeled and sliced thinly
- 1 teaspoon peppercorns
- 3 bay leaves
- 2 tablespoons cooking oil
- 1 cup water
- Salt and pepper to taste
- Optional: hard-boiled eggs, peeled
Instructions:
Step 1: Marinate the Chicken
1. In a large bowl, combine the chicken, soy sauce, half of the minced garlic, and peppercorns. Mix well.
2. Let it marinate for at least 30 minutes. For a richer flavor, you can marinate it overnight in the refrigerator.
Step 2: Sauté the Chicken
1. Heat cooking oil in a wide pan over medium heat.
2. Sauté the remaining minced garlic and sliced onions until fragrant and onions are translucent.
3. Add the marinated chicken to the pan. Sear the chicken pieces until browned on all sides.
Step 3: Add Vinegar and Simmer
1. Pour in the white vinegar and allow it to boil for about 2-3 minutes to get rid of the vinegar's strong smell.
2. Add water, bay leaves, and season with salt and pepper to taste.
3. Bring it to a boil, then lower the heat, cover, and let it simmer for 30-40 minutes or until the chicken is tender and the sauce has thickened.
Step 4: Optional - Add Hard-Boiled Eggs
1. If desired, you can add peeled hard-boiled eggs to the adobo during the last 10 minutes of cooking. This is a classic addition to the dish.
Step 5: Serve and Enjoy
1. Once the chicken is tender and the sauce has thickened, remove the bay leaves.
2. Serve the Tagalog Chicken Adobo over steamed rice.
3. Garnish with some chopped green onions or parsley for a fresh touch.
